Pumpkin and Flax Seed Berry Bars

Seed cycle friendly breakfast bars that pair well with a woman's Follicular and Menstrual Phase

Ingredients
  

  • 1 c butter cold and cubed
  • 1 c flour
  • ½ c and 1 tablespoon ground flax
  • ½ c and 1 tablespoon ground raw pumpkin seeds
  • ¾ C sugar divided ¼ for base ½ for berry mixture
  • Lemon zest from one lemon
  • 3 c mixed berries
  • Juice from one lemon
  • ½ c sugar lemon mixture
  • 2 tbls corn starch

Equipment

  • Kitchen aid optional
  • 9x9 pan
  • zester

Method
 

  1. Rub lemon zest and sugar together with your fingers, and divide
  2. Mix flour, ground flax, ground pumpkin seeds and ¼c lemon sugar
  3. Using paddle attachment add in cold butter until well combined.
  4. Cook down berries with corn starch
  5. Put half of the flour mixture in the bottom of a 9x9 pan
  6. Pour berry mixture on top
  7. The sprinkle the rest of the crumble mixture on top
  8. Bake at 375 for about 40 mins

Notes

You can use any berry you'd like. I chose these berries because they perfectly matched the needs of these two phases: follicular and menstrual.
