Grilled Citrus Herby Chicken

A citrus chicken with Chimichurri

Ingredients
  

  • 1 bunch Parsley
  • 2 Garlic gloves
  • 1 Lemon zest
  • 1 bunch Mint
  • ΒΌ th cup oil divided in two
  • Juice from 2 Oranges
  • S+P
  • 1 Orange zest
  • 1 tablespoon Toasted coriander seeds
  • 2 Chicken breast

Equipment

  • zester
  • grill
  • morter and pestle

Method
 

  1. Mix Marinade of half of the olive oil, orange zest, orange juice, salt and pepper, and ground toasted coriander seeds.
  2. Marinade chicken for at least an hour.
  3. Start grill and grill until 360. Let rest for 5 to 10 minutes. It will finish cooking and allow it to stay juicy.
  4. While chicken is resting, blend together parsley, garlic, lemon zest, lemon, mint, S+P, and olive oil. You should still be able to see what each herb is. Not blended too fine.
  5. Serve chicken sliced with a chimichurri on top
