Dandelion Honey

Honey made from Dandelions. A way to connect with a forgotten flower.
Prep Time 2 hours
Course: Side Dish

Ingredients
  

  • 3 cups of dandelion flowers
  • 2 cups of sugar
  • 3 cups of water
  • 1 Lemon sliced
  • 1 vanilla bean sliced in half

Equipment

  • sauce pan
  • strainer

Method
 

  1. Collect dandelion flowers
  2. Wash
  3. Cut petals off green part (less green = Less bitter)
  4. Mix petals, water, sliced lemon, and vanilla bean
  5. Bring to boil and let simmer for 30 mins or so
  6. Remove from heat
  7. Let sit overnight
  8. Strain flowers from liquid
  9. Heat liquid and slowly add 2c sugar.
  10. Bring to boil
  11. Let simmer for up to an hour or until the consistency you’d like.

Notes

Dandelions are finally getting some much-deserved love. The leaf is a delicious salad green, the root makes an earthy tea, and the flowers are not only bright and beautiful, but also edible.
While planting my garden, the sunny dandelion flowers to me back into childhood. I remembered the tradition of rubbing dandelion petals on my skin to show yellow—meaning you’re in love. Sitting with that memory for a moment, I felt playful, and smiled. The whimsy is back: playfulness in my urban garden, playfulness with my food, playfulness in my dandelion honey.
