Pineapple Pulled Pork Roast

This simple and flavorful recipes is so easy. I made them into pulled pork sandwiches but use it to top salads or rice.

This is an all year round recipe, but with the instant pot and pineapple this pork recipe feels like summer. Keeps the house cool and the taste bright.

Ingredients

  • Pork roast
  • Garlic powder
  • Toasted coriander seeds
  • Chicken stock
  • Pineapple
  • serrano pepper
  • S+P

Instructions

  1. Pat dry pork and sprinkle crushed coriander seeds, garlic, and salt and pepper. Brown each side of your pork roast.
Add all ingredients
  1. Add pineapple, broth, peppers, and salt and pepper. Turn on high and cook for 20 mins for ever lb.
once pressure is released, separate liquid and shred meat.
  1. Let Instant pot release, strain juice, and shred pork.
Shredded pork roast.
  1. Save for sandwiches, salads, or to top grain. I froze the remaining broth.

Substitutions

  • Pineapple - feel free to use fresh pineapple and compensate the juice for more broth.

Variations

  • Bun - to make a sandwich toast bun, add mayo and gremolata
  • Spicy - add more serrano if you like a little extra heat. This was pretty light on heat.

Ingredients
  

  • Summer Pork roast
  • Pork Cut into 3 pieces
  • Sprinkle with garlic
  • toasted coriander
  • 1.5 c Chicken stock
  • One can of pineapple
  • ½ serrano pepper sliced
  • S+P

Equipment

  • Instant Pot
  • Spice grinder

Method
 

  1. Cut pork into 3 pieces
  2. slice peppers
  3. sprinkle meat with ground coriander seeds, garlic powder, and salt and pepper
  4. brown pork meat
  5. add broth, pineapple juice, and pineapple
  6. Turn on high pressure and cook for 20 mins per lb
  7. Let release
  8. keep juice and mix in as needed after shredding
  9. freeze leftover juice
