Citrus Salad with Sprouts

This punchy citrus salad is loaded with fresh greens and nutty, crunchy sprouted mung beans. The creamy citrus vinaigrette is sharp and tangy. The citrus segments are juicy and beautiful. This recipe is a delicious and a show stopper.

A perfect summer dish.

This dish was inspired by a dance technique called 5 rhythms. One of the rhythms is called Staccato which is sharp swift movements. So this salad has a sharp citrus punch to it.

Ingredients

  • lemons zested and squeezed
  • Tahini
  • Freshly ground pepper
  • Flaky salt 
  • Olive oil.
  • Romaine lettuce
  • Sprouted mung beans
  • Grapefruit 
  • 1 orange
  • Green onions
  • Snap peas

Instructions

Sam slices oranges, lettuce, and snap peas.
  1. Slice oranges removing all the white part. Chop lettuce, green onion, and snap peas. Set aside.

  1. Once dressing is mixed add greens and mix.

  1. Add orange and grapefruit segments, mung bean sprouts, and sliced snap peas.

Hint: Don't worry too much if the snap peas don't slice length wise. It takes some patience and even then, the peas don't always come out beautifully. If you're wanting to get the citrus segments nice and clean, remove all the rind, slightly cutting into the citrus so it looks vibrate and theres no white part. Then you can see there are literal segments when you'd take a piece of orange. Cut into those segments at an triangle with the knife to remove the orange segment.

Variations

  • No time to make the mung bean sprouts? No worries, just add some toasted pumpkin seeds and it'll add a nice crunch.
  • This is a very citrus and sharp salad. Take away one lemon if you so choose and it'll be just as tasty.

Citrus Salad with Spouts and Creamy Dressing

Ingredients
  

  • 3 lemons zested and squeezed
  • ¼ c up of tahini- I guess here
  • Tons of freshly ground pepper
  • Sprinkle of flaky salt
  • ¼ c of olive oil
  • 3 romaine lettuce
  • 1 c sprouted mung beans
  • 1 grapefruit remove peel by slicing the edges with a knife so you can see the vibrant pulp.
  • 1 orange remove the peel by slicing the edges with a knife so you can see the vibrant pulp.
  • 2 stalks of green onions
  • 1 c of snap peas (carefully break open pods to reveal peas) this is just for looks you don't have to peel them

Method
 

  1. mix dressing in the serving bowl
    3 lemons zested and squeezed, ¼ c up of tahini- I guess here, Tons of freshly ground pepper, Sprinkle of flaky salt, ¼ c of olive oil
  2. add in chopped lettuce and mix
    3 romaine lettuce
  3. layer the rest. I added many layers of all these ingredients so you can see everything as well as get a bite of everything.
    1 c sprouted mung beans, 1 grapefruit, 1 orange, 2 stalks of green onions, 1 c of snap peas (carefully break open pods to reveal peas)
