Dandelions are finally getting some much-deserved love. Their leaves make a delicious salad green, the roots brew into an earthy tea, and the flowers bright, sunny, and abundant are not only beautiful, but edible too.

While planting my garden, the cheerful yellow of the dandelion flowers pulled me back into childhood. I remembered the small tradition of rubbing dandelion petals on my skin to see if they left behind yellow a sign that you were in love. Sitting with that memory, I felt myself soften. I smiled. Dandelion Honey
Ingredients

Method
- Collect dandelion flowers
- Wash
- Cut petals off green part (less green = Less bitter)
- Mix petals, water, sliced lemon, and vanilla bean
- Bring to boil and let simmer for 30 mins or so
- Remove from heat
- Let sit overnight
- Strain flowers from liquid
- Heat liquid and slowly add 2c sugar.
- Bring to boil
- Let simmer for up to an hour or until the consistency you’d like.
