Dandelion Honey (simple syrup)

Dandelions are finally getting some much-deserved love. Their leaves make a delicious salad green, the roots brew into an earthy tea, and the flowers bright, sunny, and abundant are not only beautiful, but edible too.

Summer when your yard is full of dandelion flowers.

This recipe was inspired by wanting to use what's around me. This honey like syrup pairs well with this Rose and Pistachio Custard Ice Cream, and also goes well in tea, in dressings, and on biscuits.

While planting my garden, the sunny dandelion flowers to me back into childhood. I remembered the tradition of rubbing dandelion petals on my skin to show yellow—meaning you’re in love. Sitting with that memory for a moment, I felt playful, and smiled. The whimsy is back: playfulness in my urban garden, playfulness with my food, playfulness in my dandelion honey.
