Kale, Watermelon Radish, blueberry Salad
There’s nothing cooked here, but the variety of subtle crunches and cool, fresh flavors make every bite interesting. It’s refreshing, it’s beautiful, and it's a pleasure on a plate.This dish is fun to make because of the color and textures it brings. The watermelon radish is stunning—absolutely gorgeous, and I can’t get enough of it. Its crisp, spicy bite pairs perfectly with the soft crunch of the kale and the buttery texture of the walnuts, creating a delightful medley of crunch in every bite. The fresh blueberries and ricotta dressing add just the right amount of creamy sweetness, and the shaved asparagus introduces another layer of texture and aroma.

To Assemble
- Strip the kale from the stalk and break apart with your hands. I do this because I like the feeling and texture without the stalk, but chopping, stalk and all, is 100% welcome.1 Bunch Dinosaur Kale, 1 Bunch Purple Kale
- Make dressing by adding all the ingredients listed in dressing and blending them. Taste test. Add more if needed. I like mine like a vinaigrette so a lot of tang! Once it’s right add it to the kale and mix. This will help soften the kale, but also help your other ingredients to shine not drenched in delicious vinaigrette. Add a little at a time so the kale isn’t soaking in it. If you have more for later, even better.½ C. Grape Seed Oil, 2 Slices Watermelon Radish, 1 Stalk Green Onion, ¼ C. Ricotta, 2 In. Ginger, ½ T. Whole Peppercorns, 2 T. Walnuts, Salt, White vinegar, 2 Lemons
- Grab your mandolin and slice your watermelon radish into slices. If the radish is pretty large, I like to cut mine into quarters.1 Pod Watermelon Radish
- Using a peeler, start to peel your raw asparagus into strips. The peeler may not get to the very bottom of the asparagus, no stress, this piece still has a place.5 Stalks Asparagus
- Chop the green onion. I use both white and green.1 Stalk Green Onion
- Let’s start to layer: lay out half of the watermelon radish and blueberries on the kale salad. Add some of the asparagus (put the stiffer strips in this layer). Add another layer of the watermelon radish and blueberries and then the remaining asparagus and all of the green onions. I want to see every ingredient.1 C. Fresh Blueberries
- Add the walnuts and the hemp seeds.½ C. Walnuts, ¼ C. Hemp Seeds

For me, it’s a 10 out of 10 on the life, love, and self scale of pleasure. This dish isn’t just about feeding my body—it’s about feeding my senses and my soul. Because, for me, pleasure isn’t something to keep quiet about. It’s something to celebrate.
